Introduction
This intensive 12 week programme is designed for people who wish to explore the possibilities of hospitality management before making a commitment to owning or managing a restaurant or cafe. This programme will enable you to better understand the challenges involved and to learn from experienced tutors about the issues surrounding operating these businesses.
What will I learn?
The programme covers the principles of small business management. You learn about business compliance (legal, accounting) and how to establish a hospitality business, cost menus, analyse business costs and use ratios to understand them. Marketing concepts and branding strategies to ensure business success are covered and you will analyse organisations, learn how to employ staff and build teams. You will conduct a feasibility study of a business that you may wish to set up in the future.
The computing component teaches you to use a computer in a business environment using Microsoft Excel to create templates and spreadsheets for a host of applications including budgets, cash flows and profit and loss statements.
To complete your qualification the programme will cover the requirements for you to obtain the Food Safety Certificate and Licence Controller qualification in order for you to apply for your General Manager's Certificate.

- Aged 18 or over
- Attend an interview
- Upper intermediate level of English

Graduates can further their studies with programmes in professional wine to complement your work in licensed premises or join the cookery advanced programme if you need to develop your culinary skills.
